Tonight was such a fun night. As I sit down with my laptop to write this, I have a smile on my face and a grateful heart. When we first established the new branding for Fierce Strategy + Creative, we shared it over dinner at the bar with some of our friends at Chef Dave Snyder’s Halyards restaurant on St. Simons Island. Allison Nunis—musician, bar tender and mixologist extraordinaire—especially loved the bear illustration and said she would let it inspire a rocking Fierce cocktail.
Allison texted us this weekend and said the cocktail was ready to taste. When we sat down at the bar, she shared with us how the bear illustration had inspired her ingredients: Johnny Walker Black, thyme, honey for the bear, a splash of lemon, and Heirloom Apple Brandy. It was delicious. She presented it in a cocktail coupe and garnished it with a sprig of fresh thyme. It was perfect. Robust, smoky, sweet, strong, and delightfully refreshing.
After much consideration, Honey and the Good Thyme Bear seemed like a great name, although we’re open to suggestions if you think of something fun! We will order this very special Fierce cocktail often as we share many more happy and delicious hours at Halyards with friends and clients. A huge heartfelt thanks to Allison for the wonderful experience tonight and for this fabulous recipe.

Honey and the Good Thyme Bear Recipe
1 oz. Johnny Walker Black
1 oz. Heirloom Apple Brandy
1/4 oz. lemon juice
1 oz thyme-infused honey
Shaken and served in a cocktail coupe, garnished with a sprig of fresh thyme
To create the thyme infused honey, mix a generous amount of fresh thyme with equal parts honey and water. Bring to a simmer for 5 minutes. Let steep until it is the desired flavor and strength.
